Paella

Ingredients
- 4 chicken drumsticks
- 1 chorizo
- 1kg mussels
- 15 prawns
- 500g paella rice
- 2 onions
- 3 cloves of garlic
- 1kg tomatoes
- 2 red peppers
- 50g peas
- Olive oil
- Black pepper and salt Espig
- Spigol®
- 1 litre chicken stock
Preparation
- Clean the moulds thoroughly.
- Cut the chorizo into slices.
- Chop the peppers. Peel and crush the tomatoes. Peel and chop the onions and garlic.
- In a well-oiled paella pan, brown the prawns (then set aside) and chicken drumsticks over a high heat.
- Stir in the onions.
- Add the tomatoes, garlic, Spigol, salt and pepper, stirring constantly.
- Leave to simmer over a low heat for around 5 minutes, stirring constantly.
- Add the rice, chorizo and stock.
- Add the prawns, mussels and peas and cook for 30 to 35 minutes.
Just before serving, add a few lemon wedges and parsley leaves.
